Tarts with Lemon Curd 

You can find lemon extract at any grocery store, and half a package of cream cheese will help the cookies get gooey and rich.  

These soft, gooey lemon cookies are filled with homemade sweet and tart lemon curd and don't need to be chilled. 

The combination of half a package of cream cheese, a stick of butter, and an egg yolk makes these cookies exceptionally decadent. 

I decided to use 2 teaspoons of lemon extract instead of zest or juice when making the cookie dough.

Because of this, you'll need to add more flour than called for, which will upset the ratio of wet to dry ingredients.
